Plant Based Restaurants Hold a Special Place in My Heart - Kelsey Riley

Kelsey Riley

My blog consists of original plant-based recipes that I’ve developed! I love dishes with fresh flavors that are derived from a variety of different foods.

1. Tell us about your background and journey.

I am a registered nurse with a passion for plant-based food. I began my blogging journey about a year and a half ago and started with a broad range of recipes.

As I realized the importance of eating a plant-based diet in regard to the animals, the environment, and our health, I transformed my blog into a plant-based food blog (Planted in the Kitchen) where I create and share vegan foods and recipes.

2. Which is your favorite cuisine and dish?

I’ve always been a huge fan of Italian food. I love making (and eating) homemade pasta with a variety of different sauces and pesto! The use of fresh, healthy ingredients is really important to me and I love how easy it is to use seasonal produce to make a variety of sauces.

3. Should food blogging be just a passion or can it become a regular career?

I believe that it can be both! It’s so important to fill your time with hobbies that you’re passionate about. Sometimes food blogging can suffice as a hobby and sometimes it can be transformed into a career. Blogging is definitely on the rise and there are so many ways you can turn it into a career!

4. Which restaurants/food joints would you recommend to food lovers?

Plant-based restaurants hold a special place in my heart and we are seeing more and more of them start to emerge. I’ve also seen an increase in the amount of plant-based/vegan options on menus at all kinds of restaurants which is so exciting! It’s great to see these types of restaurants and menu options out there.

5. What makes you appreciate a particular dish or a restaurant and talk about it on your blog?

My blog consists of original plant-based recipes that I’ve developed! I love dishes with fresh flavors that are derived from a variety of different foods. I appreciate dishes/recipes that are healthy, easy, and relatively inexpensive.

6. Is there a dish you particularly associate yourself with?

At this time, I would probably say smoothies or power bowls. You can get a wide variety of nutrients from both of these dishes and they are so diverse and easy to make! I really love recipes that allow for easy substitutions so each person can make it into something they enjoy, using fresh ingredients they have on hand.

7. Which is your favorite book and why?

My favorite book right now is The China Study by T. Colin Campbell and Thomas M. Campbell II. I’m usually a fan of fiction but was so captivated by this non-fiction comprehensive nutrition study, it changed the way I think about the food I put in my body.

I absolutely recommend it to anyone looking to learn more about nutrition or a plant-based diet.
