1. Tell us about your background and journey.
I am originally from Kerala but grew up in Bangalore, which has given me a unique blend of cultural experiences and culinary influences. After completing my pre-university education at St. Joseph's College, I decided to pursue my passion for the culinary arts.
I enrolled in IHM Mumbai for my hotel management degree, where I gained a comprehensive understanding of the hospitality industry. My journey then took me to an internship at Hilton in the UAE, which was a transformative experience that exposed me to high standards of international cuisine and hospitality. Following this, I worked in Saudi Arabia, further honing my skills and understanding diverse culinary practices. Currently, I am privileged to serve as a pastry chef at the prestigious Ritz Carlton, where I continue to explore and innovate in the world of desserts.
2. What's your go-to cuisine and dish?
Despite my exposure to a variety of international cuisines, I find the most comfort in simple, home-cooked meals. South Indian cuisine, in particular, holds a special place in my heart. Among the many delightful dishes, mango lemon rice stands out as my all-time favorite. It’s a dish that perfectly balances tangy and sweet flavors, evoking memories of home and family gatherings.
3. Do you think food blogging can transition from a passion to a sustainable career?
Absolutely, it’s possible for food blogging to evolve into a sustainable career, but it requires careful planning and dedication. One must be willing to take calculated risks and ensure they have the financial stability to support themselves for at least six months without a steady income. This initial period is crucial for building a strong online presence and gaining a loyal following. Additionally, understanding the business aspects, such as brand collaborations and monetization strategies, is essential for long-term success in food blogging.
4. Any recommendations for must-visit restaurants or food joints?
Certainly! In Mumbai, Ashok Vada Pav in Dadar is a must-visit for its iconic street food, and Pizza by the Bay in Marine Lines offers a wonderful dining experience with a view. Bangalore boasts several gems, such as MTR Tiffin House for traditional South Indian fare, Corner House for delectable ice creams, Lavonne for exquisite desserts, and Khmer Kitchen for delightful dinner options.
In Dubai, I highly recommend Atmosphere at Burj Khalifa for an unparalleled dining experience, as well as Public and Arabian Tea House for their unique offerings. In Saudi Arabia, exceptional dining destinations include Hakkasan, Nozomi, and Sign. Each of these places offers something special, whether it’s the ambiance, the culinary innovation, or the authenticity of flavors.
5. What aspects do you consider when appreciating a dish or restaurant?
When evaluating a dish or restaurant, I consider several key factors. Presentation is crucial as it sets the first impression and enhances the overall dining experience. Taste is, of course, paramount; a dish must deliver on flavor and balance.
Quality of ingredients is another critical aspect, as it impacts both the taste and nutritional value of the dish. Lastly, service plays a significant role in the dining experience. Attentive and knowledgeable service can elevate a meal, making it memorable and enjoyable.
6. How does your professional culinary background enhance your food vlogging experiences?
My professional culinary background significantly enhances my food vlogging experiences. As a chef, I’ve developed a keen eye for detail and a deep understanding of restaurant operations.
