Potatoes are an all-time favorite ingredient of many of us and we relish them in a number of ways in our day-to-day recipes and meals. It is one of those humble ingredients which is neutral and easy to adapt to with any kind of cooking methods, taste and flavors, combinations and concoctions, etc. from the desi connect with aloo or potatoes in Indian cooking with tempting dish outs from the aloo ka paratha, aloo tikkis, aloo chaat, aloo pyaaz ki subzi and many more.
Potatoes can be boiled, steamed, roasted, grilled, fried, and even simmered in our gravies and blends of masalas to add its unique texture, flavor, mouthfeel, and eye appeal to add a touch of finesse to our recipes made with all the love and care.
It also helps us to get back the correct texture in case our gravy gets too runny and also soaks up all the excess salt in a curry and saves us from all the further chaos and complications in our day-to-day cooking. Here are a few simple- easy to make recipes with potatoes!
Recipe-1] Chatpata Aloo Salad
Ingredients:
- Baby potatoes- 250 gms, boiled, peeled, and fried
- Onions- 1 small chopped
- Tomato-1 small chopped
- Green chili- 1 tsp chopped
- Salt to taste
- For the dressing of the salad:
- Chaat masala powder-1/2 tsp
- Crushed pepper -1/4 tsp
- Lime juice- 2- 3 tbsp.
- Tamarind chutney-2-3 tbsp.
- Tomato ketchup-2-3 tsp
- Schezuan chutney-2-3 tsp
- Olives- 4-5 black/green
- Mint leaves- 2-3 tsp
- Coriander leaves- 2-3 tbsp.
- Khara boondi-1/2 cup
- Flat papdis- 10-12 no
- Nylon sev/ bhujiya sev-1/4 cup
- Fresh pomegranate seeds-1/4 cup
Method:
1. Prepare all the ingredients for the salad recipe.
2. Prepare the potatoes to boil, deep fry to a nice golden color, and keep aside.
3. Combine ingredients for the dressing in a mixing bowl.
4. Add in the potatoes and all other ingredients one by one and give it all a nice toss, check for seasonings.
5. Adjust the taste/texture and assemble the salad on a bed of lettuce leaves/ bed of crushed papdis, top it with sev, anardana, mint coriander, splash of lime, chutneys and chaat masala.
Recipe-2] Aloo Simla Mirch Ka Saalan
Ingredients:
- Baby potatoes-350 gms, boiled, peeled, and deep-fried.
- Green capsicum cubes-1 cup, cut and fried.
- For the saalan:
- Oil-2 tsp
- Ghee-2 tsp
- Bay leaf-1 no
- Cumin seeds-1/2 tsp
- Grind the below to a paste:
- Onions-1 cup chopped
- Ginger-1-inch piece
- Garlic- 4-5 cloves
- Tomatoes-1-2 med sized
- Cinnamon stick-1-inch piece
- Peppercorns-3-4 no
- Cloves- 4-5 no
- Green cardamom-2-3 no
- Water-1/2 cup
- Additional ingredients:
- Turmeric powder-1/2 tsp
- Coriander powder-1 tsp
- Red chili powder-1/4 tsp
- Turmeric powder-1/4 tsp
- Cashew paste-1 tsp
- Kasuri
- Cream-2 tsp
- Roasted crushed peanuts-2-3 tbsp.
- Fried red chili for garnish
Method:
1. Prepare all the ingredients for the potato capsicum saalan.
2. Heat oil and ghee in a pan, add in the cumin, bay leaf and saute for a few seconds, add in the finely grounded paste as listed above and cook it on a medium flame for 6-8 mins, add little water as needed.
3. Add in the potatoes, capsicums, cashew paste, cream, Kasuri methi, all powdered spices, salt to taste and mix well.
4. Add in little water and mix well, cook for 2-3 mins. Add in freshly chopped coriander leaves, garnish with a fried red chili or some ginger juliennes and serve this recipe hot.
Recipe-3] Baby Potato Delight
Ingredients
- Baby potatoes- 250 gms, boiled and peeled
- Oil-2 tsp
- Ghee-2 tsp
- Dry red chilies- 2-3 slit
- Green chilies-2-3 slit
- Curry leaves- 4-6 no
- Cumin seeds-1/2 tsp
- Hing-1/2 tsp
- Mustard seeds-1/2 tsp
- White sesame seeds-1 tsp
- Black sesame seeds-1/2 tsp
- Saunf- 1 tsp roasted and crushed
- Turmeric powder-1/2 tsp
- Red chili powder-1/2 tsp
- Chaat masala-1/2 tsp
- Coriander powder-1 tsp
- Lime juice-2-3 tbsp.
- Water-1/2 cup
- Coriander leaves- 2-3 tbsp.
- Aamchur powder-1/2 tsp
Method:
1. Prepare all the ingredients for the aloo recipe.
2. Heat oil and ghee in a pan and start adding up the ingredients in the pan allowing it to splutter and crackle.
3. Add in the potatoes, little water, salt, and all other powdered spices and give it a nice toss and allow to simmer in the masala for 4-6 mins.
4. Finally check for salt, add in the aamchur, lime juice, coriander leaves and serve hot.
Recipe-4] Aloo Wala Herbed Salad
Ingredients:
- Baby potatoes-250 gms, boiled and peeled
- Assorted lettuce leaves for the base of the salad
- Salt to taste
- Crushed black pepper-1/2 tsp
- Mayonnaise-1 cup
- Pesto sauce/ green chutney-2-3 tsp
- Mustard paste-1/2 tsp
- Lime juice-2 tsp
- Capsico sauce-1 tsp.
- Fresh herbs- basil- 4-5 no
- Fresh herbs- parsley-2-3 tsp
- Additional options:
- Use boiled cubed eggs, sliced sausages, shredded salami.
- We can also use tinned tuna fish in the same salad with potatoes.
- Try using shredded chicken tikka/ tandoori stuff with this salad.
Method:
1. Assemble all the ingredients for the salad recipe.
2. In a mixing bowl, combine together the ingredients for the mayonnaise dressing and give it all a nice whisk.
3. Now add in the potatoes and any other ingredients as desired and give the salad a nice toss.
4. Arrange a bed of lettuce leaves on a serving platter and place the dressed salad on the base, top it up well, add fresh herbs and garnish the salad, serve cold.
Recipe-5] Indo – Chini Aloo Wala Snack
Ingredients:
- Baby potatoes- 300 gms, boiled, peeled.
- Oil-2 tsp
- Butter-1 tsp
- Garlic-1 tsp chopped
- Ginger-1 tsp chopped
- Green chilies-1 tsp chopped
- Onion-1 small chopped
- Salt and pepper to taste
- Water/ stock-1/2 cup
- Tomato ketchup-2-3 tsp
- Schezuan sauce-2-3 tsp
- Peanut butter- 1-2 tsp
- Soya sauce-1 tsp
- Grated cheese-2-3 tbsp.
- Spring onion greens-2-3 tbsp.
Method:
1. Prepare all the ingredients for the recipe as listed.
2. Heat oil and butter in a pan and saute the ginger, garlic, onions, chilies for a minute.
3. Add in the sauces, seasonings, peanut butter and add a little water to get it to the right texture, simmer and cook for 2-3 mins.
4. Add in the boiled baby potatoes and toss well, cover and cook for 4-6 mins and serve hot garnished with peanuts and spring onion greens.
Recipe-6] Videshi Potato Tossed Bowl
Ingredients:
- Baby potatoes-250 gms, boiled, peeled
- Chicken sausages/ salami- 100-150 gms, cut into slices/diced
- Oil-1 tsp
- Butter-1 tsp
- Garlic-1 tsp chopped
- Onion-1 small chopped
- Salt and pepper to taste
- Parsley-2 tsp chopped
- Mustard paste-1 tsp
- Lime juice-2-3 tsp
- For the dressing:
- Greek yogurt/ hung curd- 1 cup beaten
- Olive oil-2 tsp
- Mint leaves- 10-12 no
- Chaat masala-1/4 tsp
- Roasted crushed cumin -1/2 tsp
- Sliced almonds/ cashews- 2-3 tsp toasted
Method:
1. Prepare all the ingredients for the potato salad recipe.
2. Heat oil and butter in a pan add in the garlic, onions, and saute for a minute.
3. Add in the boiled potatoes, sausages/salami pieces, and salt to taste, along with mustard paste, lime juice, pepper powder and cook for 2 mins.
4. Turn off the flame and cool it down completely, then add It into the beaten curd and mint mixture, toss it well.
5. Assemble the salad on a bed of crispy lettuce leaves, and garnish with sliced toasted nuts/ micro-greens/ parsley, etc and serve.
